Atlantis Dubai, in partnership with luxury hospitality company Major Food Group (MFG), is bringing the legendary restaurant CARBONE to Atlantis The Royal. Set to open on Monday 6th October, MFG will introduce its world-class, New York-style Italian menu to the UAE for the first time, marking the group’s tenth CARBONE location worldwide.
Since its debut in Manhattan’s Greenwich Village over a decade ago, CARBONE has become one of the most celebrated Italian restaurants in America and a quintessential New York City dining experience. Inspired by the legendary Italian-American dining rooms from 1950s New York, CARBONE combines old-school swagger with the highest quality ingredients. From the beginning, it was an instant success, with iconic dishes like Caesar alla ZZ, Linguini Vongole, Chicken Massimo, Veal Parmesan and of course, Spicy Rigatoni, which will also appear on the Dubai menu.
Inside CARBONE Dubai, guests will be transported to the golden age of glamour, where every element from tableside preparations to the charismatic service will play a part in bringing the true experience to life. The dining room is elegantly adorned with chandeliers, a curated art collection, velvety jewel-toned nooks, leather banquettes, and damask-adorned walls with Venetian glass mirrors, while a sleek, elongated bar and plush, vibrantly coloured seating create an inviting, social atmosphere.
Every detail of the interior has been dreamt up by longtime collaborator and multi-award-winning designer Ken Fulk, in collaboration with Bishop Design to embody MFG’s identity. The result is a seamless, immersive atmosphere where each element advances the story. A coffered ceiling in patinated metal tiles crowns the room with timeless elegance, instilling a sense of effortless familiarity.
At the heart of the restaurant lies a showstopping centrepiece – one of the largest jellyfish tanks in the world, stretching across an entire wall of the dining room. Guests may also choose to dine al fresco on the terrace, complemented by sweeping views of the Skyblaze Fountain Show. For more intimate gatherings, the restaurant offers a semi-private dining room accommodating up to 40 guests. Wine enthusiasts will also appreciate the extensive wine collection, showcasing over 450 labels, including rare vintages, boutique producers and Dubai firsts.
Founded by Chef Mario Carbone, Jeff Zalaznick, and Chef Rich Torrisi, MFG now operates a portfolio of over 50 restaurants, bars, private clubs, and hotels. The group is celebrated for its distinctive blend of storytelling, elegance, and bold creativity, delivering immersive experiences that set the standard for modern luxury hospitality.
