The fast-casual chicken salad concept will open its first restaurant in Minnesota on 28 July in the Twin Cities suburb of Apple Valley, bringing its footprint to 24 states.
The opening comes amid further expansion plans for Chicken Salad Chick in the state. Last year, the chain signed an agreement to open 10 new restaurants in the Minneapolis area through a franchise deal with the Coffeys – a well-known family of basketball players who hail from Minnesota.
In the first quarter of 2026, Chicken Salad Chick entered several key markets, including Las Vegas, Philadelphia and Phoenix. The company now operates more than 340 restaurants across 24 states and has over 300 locations in its development pipeline. It celebrated a record year in 2025, awarding nearly 100 new franchise restaurant deals and opening 42 locations across 14 states.
