Kiln, the new restaurant from Chef Mitch Orr, is officially now open for dinner service. The rooftop dining destination sits 18 stories above Surry Hills’ mosaic rooftops, crowning the recently opened Ace Hotel Sydney. The menu showcases Chef Mitch’s rollicking imagination and draws inspiration from the flavors of Italy, Japan and Southeast Asia, with a full bar program pouring cocktails, beers and wine. Featuring interiors by acclaimed designer Fiona Lynch Office, Kiln joins the hotel’s existing food and beverage venues: The Lobby cocktail bar and lounge; all-day neighbourhood restaurant LOAM; and a day-to-night laneway cafe and bar, Good Chemistry.
The restaurant’s name pays tribute to the history buried beneath Ace Hotel Sydney — site of Australia’s earliest kiln discovery, where convict potter Jonathan Leak produced domestic pottery in the 1820s. Kiln is defined by its open kitchen and wood-fired hearth, offering neighbors and newcomers an electrifying display. Here, Chef Mitch showcases his genre-bending, innovative-yet-unpretentious approach to cooking, taking dishes in novel directions and gleefully destroying the high-low dining dichotomy. Setting ablaze long-burning native ironbark and assorted fruitwoods, he applies the hearth’s open flame and smoke to regional produce, meats and seafood, delivering vibrant seasonal dishes designed for sharing.
