Sublimotion merges fine-dining with technology and performance, creating a unique and exciting dining experience.
The new food adventure, Sublimotion, is situated at Mandarin Oriental Jumeirah, and the pop-up is only available until 4 May 2022. Promising a multi-sensory journey and experience, the experience is limited to just 12 guests at a time with the dinner melding technology and high-definition screens, culinary arts and performers.
The creation of Chef Paco Roncero, who also owns of two-Michelin-starred Paco Roncero Restaurante in Madrid, first opened in Ibiza in 2014. The Sublimotion ‘show’ includes 360-degree screens with imagery projected onto every surface, including the walls and the table. These projections are utilised in an effort to create an atmosphere that is unlike anything else most have experienced in the past.
Another twist is that the menu is closely-guarded, meaning that guests can expect a surprise as the food is served with theatrics. The 10-course dinner includes dramatic presentation of each dish, and requires at least 25 performers to accomplish.
Chef Paco says, “The truth is that one of our dreams was always to be able to turn the table into a stage. And today, at Sublimotion, the table is a stage where many things happen on it and around it, Quite simply, we have made a change to the way we eat.”
