This Portland butcher is opening a restaurant in an old bank Vault

Carlos Galan could have kept the latest scoop on western Louisville’s dining scene in the vault. After all, that’s where the guests at his new restaurant are going to be dining.

But he was kind enough to share his big news with me on Thursday morning just before the lunch crowd rolled into Galan’s Meat Market and Deli at 2801 W. Market St. in Portland.

Galan is expanding his shop into an old bank building five blocks east at 2300 W. Market St., just south of the Portland border in Russell, and he’s adding a Cuban-Puerto Rican style restaurant into the mix.

The menu isn’t finalized yet, but sometime before the 2019 Kentucky Derby, he’ll have tables in the old vault and Latin fare on the grill running side by side with his meat market operation. The goal is to take the specialty items he’s been experimenting with at the deli — do yourself a favor, try the cheesy fajita soup — and build a unique yet affordable restaurant experience around that vault.
