Chicken Salad Chick to Expand in Minneapolis

The fast-casual chicken salad restaurant will open 10 new restaurants in the Minneapolis area through a franchise deal with the Coffey family – a well-known family of basketball players who hail from Minnesota.

Target development markets for the new stores include Hennepin and Ramsey County. Currently, Chicken Salad Chick is slated to open its first Minnesota restaurant in Lakeville later this year.

The Coffey family – Richard and Sheba and their children Sydney, Nia and Amir – have each contributed to state championship teams and received national accolades. Richard and Amir both played at the University of Minnesota, with Richard suiting up for the Minnesota Timberwolves and Amir currently playing for the Los Angeles Clippers. Sydney and Nia also have basketball résumés, having played collegiately and professionally. Nia is entering her ninth season in the WNBA.

“We knew we wanted to go into business with a brand that we could all get behind,” said Richard Coffey. “Chicken Salad Chick stood out because of the support and communication we’ve received from the team. This is more than a business venture, it’s a family journey and we’re excited to do it with a brand that feels the same way.”

The Minneapolis franchise agreement follows months of strong growth for Chicken Salad Chick. As of 30 April 2025, the chain has opened 21 locations so far this year. It plans to open 47 locations in total in 2025.
