The Botanist signs at The Cornhill Quarter, Lincoln

Lincolnshire Co-op has signed The Botanist for its £70m redevelopment of The Cornhill Quarter in Lincoln. The Botanist will sit alongside local and previously announced new national brands, which include Everyman Cinema, Cosy Club, Moss Bros., Flying Tiger Copenhagen, Thomas Cook and Lakeland for the revitalised city centre retail destination.

The Botanist will take 8,000 sq ft bar/restaurant split over ground and first floors and be located in the third phase of the development, which sits opposite to the completed Corn Exchange building. This phase will also be home to 30,000 sq ft Everyman Cinema and will animate this historic setting with a dramatic two-storey glazed façade, and a roof terrace bar with views of the Cathedral. Between this building and the Corn Exchange is Exchange Square, providing a new public space for the city.

Each of the drinks stimulate the senses with the perfect combination of botanical flavours. Cocktail lovers will be captivated by the magnificent and theatrical presentation of The Botanist’s cocktails. This will be its debut in Lincoln, having recently opened a site in Cheltenham and in other high profile locations such as MediaCityUK, Alderley Edge, Marlow, York and Chester.

The Cornhill Quarter scheme is rejuvenating a significant area of Lincoln’s retail pitch encompassing Cornhill, Sincil Street and St Mary’s Street, through a sensitive combination of repair, refurbishment, extension and new development. The first phase of the scheme, The Corn Exchange building, has been carefully restored and completed last year. Work is close to completion on the second phase of the £70 million Cornhill Quarter redevelopment, creating 23,000 sq ft of retail space for national and local brands, as well as a bright, attractive walkway through to the 1,000 space multi-storey car park.
